An intimate setting in the heart of Saint-Omer

Located at 14 rue Louis Martel, Le Ril’s is a must in Saint-Omer’s historic centre. The décor is meticulous, and the atmosphere is both intimate and friendly, telling a story. Caroline Broutin tells us that she visited a number of restaurateurs’ lounges before opening.

The clean lines, carefully chosen furniture and thoughtful layout create a warm setting. But what really strikes you is the centrepiece that stands opposite the dining room: an exceptional pizza oven, imported from Venice.

The History of Ril's

A Family Adventure in the Heart of Saint-Omer

In 2016, the Broutin family decided to return to their roots. Originally from Pays de Saint-Omer, they decided to set up their own restaurant in the town’s historic centre. They chose the former “Au Coq des Marais” poultry shop on rue Louis Martel.

After a complete transformation of the premises, Le Ril’s opened its doors and quickly became a not-to-be-missed address.

Today, rue Louis Martel is a lively thoroughfare in the town centre, packed with bars and restaurants popular with locals and visitors alike. It’s impossible to imagine a visit to Pays de Saint-Omer without strolling down this lively street! Just a stone’s throw from the cathedral and Place du Maréchal Foch, the restaurant enjoys a prime location that attracts locals and tourists alike.

Seasonal cuisine

At Ril's, the map is never set in stone.

Valentin, the Chef, creates his menus according to the seasons and his inspiration of the moment, drawing on the richness of the local soil.

“We’re lucky to be here,” says Valentin. With direct access to the Marais audomarois and close proximity to the Côte d’Opale, the restaurant benefits from a daily supply of fresh, exceptional produce.

Valentin even manages to create original dishes that have never appeared on the menu since it opened in 2016! This creative approach makes Ril ‘s a restaurant where every visit is a new taste experience.

It’s also a team effort. On the pizza side, Cédric, chef de partie, also suggests new recipes to the rest of the team. The Venetian pizza oven is much more than just a piece of equipment. You can watch the flammekueches and pizzas being baked to perfection, golden brown thanks to the impeccable technical skills of the team.

The Audomarois Marsh

An exceptional pantry

The Audomarois marshes are much more than just a landscape. Recognised as a biosphere reserve by UNESCO, this unique ecosystem of 3,700 hectares is the last large cultivated market garden marsh in France.

At Ril’s, this closeness to the marsh’s producers is reflected in our dishes:

    • Vegetables from the Marais: summer cauliflower, crisp endives (the famous “chicon”), celeriac, Leblond leeks…
    • Fish from the Côte d’Opale: freshness and quality guaranteed thanks to daily deliveries that allow Valentin to work with seafood at its best.
    • Committed local producers: short circuits and seasonality at the heart of the approach! The restaurant is an integral part of this local dynamic, which promotes the work of market gardeners in the Audomarois region who grow produce in the fertile, peaty marshland.
