From the Sweetness of Bubbles to the Strength of Malt

An Audomarois Sensory Walk
Exceptional crafts and products When passion rhymes with transmission

Two family businesses, two trades, two stories of handing down craftsmanship from one generation to the next. The Bouin and Persyn families perpetuate a love of tradition and excellence. Through conscientious work, they have each developed a new beverage for our greatest gourmet pleasure…

La Ferme du Nortbert

A sparkling wine from the Auvergne region

At Ferme du Nortbert in Mentque-Nortbécourt, the Bouin family, already renowned for the quality of their vegetable oils, have taken on the ambitious challenge of creating a new vineyard in the Audomar region. Eric and Chantal Bouin, along with their son Antoine, have decided to diversify their business by planting their first vines in 2021, on clay-limestone soils with ideal southern exposure. In this adventure, they are accompanied and advised by an IOC oenologist at every stage in the development of their future wines.

In September 2023, the first bunches of grapes were harvested, pressed and placed by variety in separate vats. After blending and bottling in March 2024, the wine is kept in reserve to allow for the famous “prise de mousse” that will give it the expected sparkle and length on the palate. This wine is made from a skilful blend of Chardonnay, Pinot Noir and Chardonnay grapes aged in barrels. Tastings scheduled for May 2025.

Distillerie Persyn

A first whisky exclusively at Houlle

Founded in 1812, the Houlle distillery is the oldest working grain distillery in France. The Persyn family has kept this heritage alive with a range of eaux-de-vie that have made the company famous for generations. Endowed with the prestigious Entreprise du Patrimoine Vivant label, it has been awarded three gold medals at the renowned World Gin Awards in the World’s best Genever category: in 2018 for its Brut de fût, in 2021 for its Genever for long drink, then in 2023 with the gin Juillet Nord resulting from a partnership with Maison Ferroni. These products can be enjoyed as aperitifs, cocktails or digestifs, but also in recipes honoring the gastronomy of our region. Three years ago, Lionel Persyn created a new type of distilled product, which he put into casks for ageing out of sight. He promises us a whisky with a rounded taste and a long finish. The first batch was inaugurated on the day of the Fête de la Moisson in Houlle, and the distillery is already announcing that a second batch will be available in December 2024.
